What could be more warming on a chilly day than a dram of Barbados Rum? Here it’s combined with the perfect balance of sweet and sour ingredients to lift spirits and warm cockles.

Ingredients

20ml lime juice
2 teaspoons of apricot jam
1 pinch of cinnamon
50ml Barbados Rum
1 egg white, or use Aqua Faba for a veggie alternative
Nutmeg to garnish

Method

Add all the ingredients to a cocktail shaker (or, if you don’t have a shaker, a jar with a well-fitting lid will work just as well). Add ice, then shake hard and strain through a fine strainer. Serve straight up in martini or Old Fashioned glass. Grate a little fresh nutmeg over the top to garnish, and serve immediately.
