A taste of summer
Author: Stewart Turner
It was a stomach-rumbling job putting together this year’s summer brochure, so tempting were the photographs of Head Chef Stewart Turner’s dishes. We’ve persuaded him to part with three simple, delicious recipes. To kick off, try this easy nut mix (just right with a chilled glass of Fino).
This moreish nut mix is a staple of my store cupboard, a great nibble to have on hand for any surprise visitors or just to crack open with a pre-dinner drink.
Spicy nut mix
- 100g cashew nuts
- 100g hazelnuts
- 100g almonds
- 1 tablespoon honey
- A pinch of salt
- 2 sprigs of rosemary leaves – picked and chopped
- 1 teaspoon coarsely ground black pepper
- 2 teaspoon smoked paprika
- 1 tablespoon hazelnut oil
Preheat the oven to 170°C. Toast the nuts for about 10 minutes until nice and golden then mix in the honey along with the rest of the dry ingredients and toast for a further two minutes. Finally, mix in the oil, leave to cool and transfer to an air-tight container.
So when do you add the honey?
Dear Robin,
I have checked with Stewart and the honey goes in alongside the dry ingredients – I have amended the recipe to make sure this is clear.
Kind regards,
Sophie
I can only find one of the three recipes promised; also, the link to your summer brochure is dead. Or, I am thick and doing something wrong. Guidance would be gratefully received……
Dear Mark,
You can find all three of the recipes here. I’m very sorry about the link to our Summer Offer – this has now been amended.
Kind regards,
Sophie
